Dusty hay lofts and fragrant lilies joined cloudy lemonade and chamomile tea with sticky flapjacks and tamarind paste. Dry hay and straw stayed with us on the palate to be joined by oily nuts and wood resin while the soft fruits of poached pears, orange and whisky-soaked cherries joined the heady spices of cloves, nutmeg and white pepper. Water released delicious banana and coconut fritters drizzled with sweet syrup and white chocolate flakes while panettone and brioche bread fused together. Textures were now silky and creamy with waxy notes and honey with candied citrus peel steeped in cocktail bitters and cloves on the finish.
